Fermentation responds to temperature, flour, and starter vigor in ways formulas approximate. The desired-dough-temperature method and hydration math are the standard scaffolding — your kitchen, your flour, and your jar of yeast are the variables that finish the job.

Home-milled and gluten-free flours behave outside these models entirely. Young starters (under 4 weeks) need established schedules, not optimized ones.

Accuracy of calculations

We implement well-known, publicly documented formulas (see the methodology section on each calculator page and published baking-science method (DDT, baker's percentages) as applicable). Even correctly implemented formulas produce estimates that depend on your inputs and assumptions. Real-world outcomes vary. Do not rely on a single web tool for a consequential decision.
