Bakers Math, Perfect Crumb.

Stop guessing hydration. Factor in starter flour and water contributions accurately, compute water temperature targets (DDT), and scale levain feeding schedules with precision.

💧

True Hydration Math

Starter is 50% flour and 50% water. We compute real hydration across the entire dough mass.

🌡️

DDT Fermentation Control

Eliminate bulk fermentation unpredictability by calculating the exact water temperature needed to hit 24°C / 76°F.

🧺

Banneton Basket Fit

Match finished dough weights to 8", 9", or 10" proofing baskets so your loaves rise tall rather than flat.

Questions Answered

About SourdoughLab

Why does my hydration differ from the recipe?
Most recipes quote water ÷ flour without counting the starter — a 20% starter at 100% hydration adds 10 points of water and 10 of flour invisibly. True hydration is the honest number.
How accurate is the DDT method?
It is the standard professional method — exact under its assumptions (flour at room temp, no machine friction). Home mixers add friction heat; hand-mixed doughs land on target.
Do you store my dough data?
No. Everything runs locally in your browser. No accounts, no server processing.
Is SourdoughLab really free?
Yes — every tool and guide is free, supported by unobtrusive advertising. No flour affiliates, no course upsells.
